
Soft Chocolate Cookies
225g butter or margarine, softened
300g sugar
2 eggs
10 ml vanilla extract
250g all-purpose flour
55g baking cocoa
3g baking soda
3g salt
chocolate chips (optional)
confectioners' sugar (optional)
Preheat the oven to 350°F / 180°C.
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture. (Chocolate chips may be added now if desired.)
Scoop cookies onto a baking sheet 2 inches apart. Flatten with a fork if desired. Bake for 7-10 minutes or until the edges are firm but centre is still soft. Leave to cool slightly on baking sheet then remove to wire racks. Dust warm cookies with confectioners' sugar if desired.
