I interrupt this blog to bring you a very important announcement: I cooked rice correctly last night!
No, really, this is a big deal. I can never cook rice. It always comes out stodgy somehow. BUT last night I cooked rice for dinner and it came out great! Seperate, fluffy and white (well, and black - it had wild rice mixed in). I think I finally figured it out - no stirring, no rolling boil, just a gentle simmer until done.
I would have taken a picture but you know when you're trying to do five things at once and the kids are asking for help and / or going, "Look at this"? Yeah, photos weren't happening.
